When your knives are not cutting like when they were new. Use your honing rods once a week or once a month when you can for maintenance. Better quality steel also will keep the sharpness longer; so don’t buy cheap. For an average home cook, it is about ONCE OR TWICE A YEAR.
-
Do not put them in the dishwasher; the temperature and hitting other metal things can damage your knives. Cutting against bone & cutting pieces of frozen meats also will dull your knives fast. Do not use the sharp edge of your knives to scrape food on your cutting board; turn your knife upside down and use the spine. Do not cut / chop on ceramic plates and glass cutting boards. Store your knives on a magnetic rack or block, or in roll.
